- PAN: 18 BY 26-INCH SHEET PAN TEMPERATURE: 350 F. OVEN :1. REMOVE NECKS. WASH HENS (INSIDE AND OUT) THOROUGHLY UNDER Cool RUNNING WATER. DRAIN WELL; PAT DRY.
- USING SHARP BONING KNIFE Or possibly CLEAVER, SPLIT HENS IN HALF LENGTHWISE.
- PLACE EACH HALF, SKIN SIDE UP, ON LIGHTLY GREASED PANS.
- BAKE 30 Min.
- HEAT BROWN SUGAR, HONEY AND ORANGE JUICE Till SUGAR IS MELTED TO PRODUCE A GLAZE.
- REMOVE HENS FROM OVEN; BRUSH TOPS WITH GLAZE.
- RETURN TO OVEN; BAKE 30 TO 45 Min Or possibly Till DONE (180F.)
- POUR REMAINING Hot SAUCE OVER HENS IN EACH PAN BEFORE SERVING.
- ALL NOTES ARE PER 100 PORTIONS.
