- Potatoes
- canola oil
- salt and pepper

- Partially cook the potatoes. This gets rid of some of the moisture so the hash browns become crisp when cooked.
- Cool the potatoes until they're easy to handle then use the coarse side of a box grater, crefully grate all potatoes.
- Mix grated potatoes with salt and pepper. Shape each into your desired shape.
- Cook in batches so they keep their shape - if you overcrowd the pan, it's harder to turn them during cooking.
