Frankly, I have never been able to find good store-bought chorizo, so I made up a recipe, which I use for cheese dips, tortilla dishes, scrambled eggs, and lasagna.

This tastes best after being in the fridge two days, so prepare it in advance.

What you don't use, will freeze.

    Hi,

Jimmy Dean came out with a winner, but he doesn't make it anymore. Otherwise, what is available is too fatty and God know what is in it.

      Hi Myra:
I agree it is impossible to find good store bought Chorizo. If you read the ingredients list on store bought it is somewhat frightening. I have several recipes for Chorizo but this is the first I have seen that uses beef in additon to pork. I like the combination of two proteins. Your's also uses less vinegar than most which I like. Too much vinegar takes away from the Chili seasoning. I have added this to my Try Soon folder. Thanksfor sharing!
      Bob
