- Mix fruit cake mix and rum. Cover and chill at least 24 hrs.
- Make ice cream into 8 large balls or possibly servings. Roll each in toasted coconut. Place on chilled cookie sheet. Cover loosely. Freeze up to 24 hrs.
- When serving, spoon about 1 Tbsp. of fruit cake mix over ice cream ball.
