%20and%20closely%20resemble%20many%20of%20the%20sausages%20I%20remember%20growing%20up%20in%20England%20where%20pale%20colored%20pork%20sausages,%20flavored%20most%20commonly%20with%20either%20apple%20or%20sage,%20were%20a%20weekend%20breakfast%20table%20favorite.%20However,%20it%E2%80%99s%20the%20boudin%20noir,%20made%20with%20pigs%20blood,%20grains,%20fat%20and%20seasoned%20with%20white%20pepper%20and%20nutmeg%20that%20I%20am%20most%20interested%20in,%20perhaps,%20because%20of%20a%20fascination%20with%20just%20how%20one%20makes%20sausages%20out%20of%20congealed%20pigs%20blood,%20but,%20principally%20because%20their%20gruesome%20reputation%20belies%20their%20extremely%20delicate%20texture%20and%20taste.%20Their%20rich%20color,%20unique%20minerally-flavor,%20and%20loose,%20unctious%20mouth-feel,%20is%20obscured%20by%20our%20collective%20fear%20of%20blood,%20though%20given%20the%20current%20inexplicable%20popularity%20of%20all%20things%20vampire-related,%20whether%20this%20is%20shared%20by%20younger%20generations%20is%20unknown.%3C/p%3E%3Cp%3EIn%20France,%20there%20are%20various%20centers%20of%20boudin%20production,%20but%20it%20is%20relatively%20easy%20to%20find%20throughout%20the%20country.%20The%20meal%20above%20is%20a%20take%20on%20one%20we%20ate%20in%20the%20charming%20medieval%20town%20of%20Arras%20(more%20famous%20for%20its%20wall-hanging%20carpetry%20than%20its%20gastronomy)%20in%20north-eastern%20France%20around%20New%20Year%202009.%20The%20potato%20gratin%20and%20green%20salad%20of%20that%20meal%20being%20substituted%20here%20with%20puy%20lentils%20and%20some%20charmingly%20minute%20steamed%20vegetables%20%E2%80%93%20zucchini%20in%20this%20case%20%E2%80%93%20and%20pickled%20pattypan%20squash.%20The%20latter%20picked%20up%20during%20some%20holiday%20impulse%20buying%20at%20a%20supermarket%20outside%20the%20nearby%20town%20of%20Noyon,%20and%20the%20jar%20breached%20for%20this%20special%20recreation.%20This%20dish%20was%20extremely%20good,%20though%20the%20boudin%20did%20deflate%20somewhat%20during%20cooking%20which%20I%20took%20to%20be%20an%20indictment%20of%20the%20particular%20sausage-maker%E2%80%99s%20art%20rather%20than%20a%20facet%20typical%20of%20blood%20sausages%20in%20general.%20Should%20you%20wish%20to%20avoid%20that%20possibility%20altogether%20though,%20I%20would%20certainly%20council%20frying%20thick%20slices%20of%20boudin%20on%20a%20hot%20plate,%20or%20similar%20device,%20until%20crispy%20on%20the%20outside.%20The%20contrast%20with%20the%20lentils%20and%20the%20soft%20interior%20of%20the%20sausage%20would%20be%20even%20better%20than%20what%E2%80%99s%20pictured%20here.%3C/p%3E%3Cp%3EBoudin%20Noir%20with%20Puy%20Lentils%20(serves%202)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3ERecipe:%3C/p%3E%3Cp%3EIn%20a%20large%20saucepan,%20place%20garlic,%20onion,%20lentils,%20bay,%20salt%20and%20water.%3C/p%3E%3Cp%3EBring%20to%20a%20boil,%20then%20reduce%20to%20a%20simmer,%20and%20cook%20until%20lentils%20are%20a%20little%20softer%20than%20al%20dente%20but%20not%20mushy,%2012-15%20minutes.%3C/p%3E%3Cp%3EIn%20a%20saute%20pan,%20heat%201%20tablespoon%20of%20olive%20oil%20to%20a%20medium%20heat%20before%20adding%20boudin%20noir.%3C/p%3E%3Cp%3EAllow%20skins%20to%20brown%20slightly%20before%20pouring%20in%20white%20wine%20and%20covering%20with%20tight-fitting%20lid.%3C/p%3E%3Cp%3EAllow%20boudin%20to%20steam%20in%20wine%20and%20juices%20for%2010%20minutes.%3C/p%3E%3Cp%3ERemove%20boudin%20carefully,%20turn%20heat%20to%20high%20and%20reduce%20juices%20by%20half.%20Reserve.%3C/p%3E%3Cp%3EIn%20a%20bowl,%20combine%20olive%20oil,%20lemon%20juice,%20dijon%20mustard%20and%20tarragon%20with%20a%20pinch%20of%20salt%20and%20black%20pepper,%20and%20whisk%20vigorously%20into%20a%20vinaigrette.%3C/p%3E%3Cp%3EWhen%20lentils%20are%20cooked%20plate%20them%20with%20cooked%20boudin%20and%20pour%20over%20vinaigrette%20and%20reserved%20pan%20sauce.%3C/p%3E%3Cp%3EEnjoy%20with%20a%20medium%20to%20full%20bodied%20red%20from%20Languedoc%20or%20the%20upper%20Rhone%20valley.%3C/p%3E){kind=link}
