- Remove 1 1/2 c. white kidney beans to medium bowl; mash beans till smooth with a potato masher or possibly fork.
- In 5 quart. pot, heat extra virgin olive oil, ham, celery, carrots, onion, zucchini, basil, and pepper till veggies are tender and begin to brown, about 15 min.
- Stir in stewed tomatoes, chicken broth, minced spinach, mashed white beans, and 2 c. water, use spoon to break up tomatoes; heat until boiling.
- Reduce heat, cover, and simmer 15 min to blend flavors. Stir in remaining beans; heat through.
- Sprinkle with parmesan cheese and serve.
