Hearty Beef And Potato Soup

Ингредиенты

  • 1 lb stewing beef, cut into 2-inch chunks
  • 3 x bay leaves
  • 4 sm potatoes, peeled and cut into small cubes
  • 4 sm onions, minced
  • 3 lrg clv garlic, finely minced
  • 1 x 1 inch piece ginger, peeled and grated
  • 1 x cinnamon stick
  • 1 tsp salt
  • 2 med carrots, minced
  • 1/4 bn parsley, finely minced
  • 1/2 tsp cinnamon pwdr
  • 1 c. diced tomatoes
  • 1/2 c. green peas
  • 1 c. sweet corn
  • 1 handf spaghettini, broken into pcs
  • 1/4 bn cilantro, finely minced
  • 2 Tbsp. extra virgin extra virgin olive oil

Инструкции

  1. First, bring a large pot of water to a boil on high heat.
  2. Add in the beef chunks and the bay leaves.
  3. Boil for 5 min and drain, discarding the cooking water and bay leaves.
  4. Rinse the boiled beef with cool water and cold.
  5. Cut the beef chunks into bite-size pcs.
  6. Put 6 c. fresh cool water in the same pot and add in the beef, potatoes, onions, garlic, ginger, cinnamon stick and salt.
  7. Bring to a boil on high heat, reduce the heat to medium, and let simmer vigorously for 30 min.
  8. Add in the carrots, parsley and cinnamon pwdr.
  9. Continue to let simmer vigorously for another 15 min.
  10. Add in the tomatoes, peas, corn and broken spaghettini, reduce the heat to low and simmer 15 min.
  11. Finally, add in the cilantro leaves and the extra virgin olive oil.
  12. Stir well and turn the heat off.
  13. Let it sit on the cook top covered for 10 min.
