Рецепт Healthy & flavorful pesto (with rotini, parmesan, spinach and pine nuts!)
Ингредиенты
- 1 cup fresh basil leaves
- 1/4 cup fat-free ricotta cheese (I might have used a bit more than 1/4 cup)
- 2 tbsp. pine nuts
- 1 tsp. olive oil (I used EVOO)
- 1 tsp. chopped garlic (I just used 2 cloves of garlic â might be more than 1 tsp but gave it great flavor)
- 1/4 tsp. salt, or more to taste
- 1/4 tsp. black pepper, or more to taste
- Frozen Spinach
- Freshly grated Parmesan (to top your pasta dish)
- Whole wheat rotini pasta (or any whole wheat pasta you like!)
- Pasta water (save about 1-2 ladle-fulls after cooking the pasta â it helps to make the sauce even creamier!)
