Ингредиенты

  • 100 gm Grnd roasted hazelnuts
  • 100 gm Butter
  • 100 gm Flour, sifted
  • 250 ml Lowfat milk
  • 1 x Vanilla pod
  • 10 x Egg whites
  • 6 x Egg yolks
  • 100 gm Caster sugar
  • 3 ounce Cocoa pwdr
  • 5 fl ounce boiling water
  • 2 ounce Icing sugar
  • 6 ounce Dark chocolate Cointreau
  • 2 fl ounce black coffee

Инструкции

  1. Preheat oven to 180C/325F/gas 4.
  2. Heat the butter in a pan and add in the flour. Cook out.
  3. Hot the lowfat milk in a pan with the vanilla pod and carefully add in to the roux.
  4. Place into a bowl and fold in 2 egg whites. Incorporate the egg yolks one at a time, beating till smooth. Whisk the remaining 8 egg whites to a snow with the sugar and stir a third into the yolk mix.
  5. Mix in the hazelnuts, then the whisked egg whites. Pipe into the moulds
  6. (greased) and dust with sugar. Fill three quarters full. Cook in a bain Marie for 25-30 min.
  7. Chocolate sauce: Add in the cocoa pwdr to water. Add in all to melted chocolate, coffee and liqueur.
  8. Serve with the chocolate sauce and toasted hazelnuts and icing sugar and cocoa pwdr dusted on top.
