I think I can count on one hand, how many times I've eaten macaroni salad. I've never been too impressed with it, is all I can say.
Until I made this Hawaiian Macaroni Salad.
I had just finished watching the America's Test Kitchen video (which requires a paid subscription) on how to make Hawaiian Huli Huli Chicken. The suggested side dish, for the chicken was to serve it with sticky rice and Hawaiian macaroni salad. So, why not? I was game to make this, because I know that my men love anything with pasta-- and I was feelin' a relapse of Island Fever.

%20on%20how%20to%20make%20Hawaiian%20Huli%20Huli%20Chicken.%20%20The%20suggested%20side%20dish,%20for%20the%20chicken%20was%20to%20serve%20it%20with%20sticky%20rice%20and%20Hawaiian%20macaroni%20salad.%20%20So,%20why%20not?%20I%20was%20game%20to%20make%20this,%20because%20I%20know%20that%20my%20men%20love%20anything%20with%20pasta--%20and%20I%20was%20feelin'%20a%20relapse%20of%20Island%20Fever.%3C/p%3E%3Cp%3EI%20love%20it%20when%20I%20have%20all%20of%20the%20ingredients%20to%20make%20a%20recipe,%20and%20this%20salad%20is%20pretty%20simple.%20Large%20elbow%20macaroni,%20sliced%20green%20onion,%20chopped%20celery%20and%20freshly%20grated%20carrots.%3C/p%3E%3Cp%3EThat%20sounds%20pretty%20healthy,%20right?%3C/p%3E%3Cp%3EWell,%20except...maybe,%20for%20the%20mayo.%20Like%20one%20cup%20of%20mayonnaise%20for%20the%20whole%20salad.%20We'll%20see%20about%20that!%3C/p%3E%3Cp%3ETo%20the%20part%20of%20the%20mayonnaise,%20we%20add%20a%20bit%20of%20brown%20sugar,%20salt%20and%20pepper,%20and%20then%20we%20add%20part%20of%20the%20volume%20of%20whole%20milk%20(this%20will%20make%20sense%20later).%3C/p%3E%3Cp%3ESo,%20now%20we%20give%20all%20this%20a%20nice%20little%20whisking,%20and%20then%20I%20think%20to%20myself,%20%22this%20looks%20very%20thin!%22%20But,%20I%20have%20to%20trust%20America's%20Test%20Kitchen%20and%20so%20I%20continued%20with%20my%20mission.%3C/p%3E%3Cp%3EWhat%20I%20really%20like%20about%20the%20Cook's%20Illustrated/Cook's%20Country/America's%20Test%20Kitchen%20family%20is%20that%20they%20really%20do%20test%20their%20recipes--%20a%20lot.%20I%20appreciate%20their%20twists%20on%20recipes,%20and%20reading%20why%20they%20chose%20a%20particular%20method%20or%20ingredient.%20%20With%20this%20macaroni%20salad,%20the%20macaroni%20is%20intentionally%20overcooked.%20The%20reason%20is%20so%20that%20dressing%20will%20better%20absorbed%20into%20the%20pasta.%3C/p%3E%3Cp%3EOnce%20the%20pasta%20is%20drained,%20vinegar%20is%20added%20and%20tossed%20to%20absorb.%3C/p%3E%3Cp%3EAfter%20waiting%20about%20ten%20minutes,%20the%20salad%20dressing%20is%20added...%3C/p%3E%3Cp%3E...and%20tossed%20until%20well%20coated,%20and%20then%20allowed%20to%20completely%20cool.%20%20I%20was%20relieved%20to%20find%20that%20the%20watery%20dressing%20had,%20indeed,%20been%20absorbed%20into%20the%20pasta.%20Whew!%3C/p%3E%3Cp%3ESo,%20now%20we%20add%20all%20the%20veggies,%20and%20the%20remaining%20mayonnaise%20and%20milk.%3C/p%3E%3Cp%3ESo,%20there%20we%20have%20it:%20Hawaiian%20Macaroni%20Salad,%20made%20simple%20and%20quite%20tasty%20looking,%20indeed.%20%20This%20needs%20to%20be%20refrigerated%20for%20at%20least%20one%20hour,%20before%20serving.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20I%20had%20reduced%20the%20cider%20vinegar%20by%20half,%20and%20I'm%20glad%20that%20I%20did.%20The%20dressing%20was%20super%20creamy,%20with%20just%20the%20right%20acidic%20balance%20to%20it.%20The%20seasonings%20were%20very%20simple,%20and%20I%20liked%20the%20crunch%20of%20the%20carrots,%20scallions%20and%20celery.%20%20%20I%20did%20cut%20the%20recipe%20in%20half,%20and%20I'm%20glad%20that%20I%20did.%20This,%20very%20easily,%20made%20eight%20servings--%20and%20I%20was%20cooking%20for%20just%20the%20three%20of%20us.%3C/p%3E%3Cp%3EThis%20is%20a%20%20traditional%20Hawaiian%20lunch%20plate--%20Huli%20Huli%20Chicken,%20Hawaiian%20macaroni%20salad%20and%20rice.%20The%20salad%20was%20completely%20gone,%20by%20the%20next%20day,%20after%20my%20son%20polished%20it%20off.%20%20Yes,%20I%20would%20make%20this%20again%20and%20this%20would%20make%20a%20great%20potluck%20salad%20to%20bring%20(as%20long%20as%20it's%20kept%20well%20chilled%20and%20out%20of%20the%20sun,%20because%20of%20the%20mayonnaise).%3C/p%3E%3Cp%3ENOTE:%20Some%20of%20you%20might%20be%20thinking%20you%20could%20cut%20calories%20by%20using%20low-fat%20milk,%20or%20reduced-fat%20mayonnaise.%20%20ATK%20says%20that%20doing%20this%20will%20alter%20the%20dressing%20into%20being%20too%20thin%20and%20watery.%20Go%20ahead%20and%20try%20it,%20but%20do%20it%20at%20your%20own%20risk!%20%20I%20cut%20calories%20by%20eating%20a%20small%20and%20reasonable%20portion,%20and%20then%20letting%20my%20tall,%20thin%20and%20young%20son%20eat%20the%20rest%20of%20it!%3C/p%3E){kind=link}
