  • 1/4 c. butter
  • 1 1/2 lb zucchini coarsely shredded (to make 4 c.)
  • 1/2 tsp salt
  • 1/2 x fresh garlic clove finely chopped
  • 2 x Large eggs
  • 6 Tbsp. grated Parmesan cheese (freshly grated is best)

  1. Combine zucchini with salt in a medium-size bowl. Let stand for 15 min. Squeeze with your hands to press out moisture. Stir in Large eggs, cheese and garlic.
  2. Heat 2 Tbsp. of the butter in a wide frying pan over medium-high heat. Mound about 2 Tbsp. of the zucchini mix in pan; flatten slightly to make a patty. Repeat till pan is filled, but do not crowd patties in pan. Cook patties, turning once, till golden brown on both sides (about 6 min).
  3. Lift out and arrange on a hot platter; keep hot. Repeat to cook remaining zucchini mix, adding more butter as needed.
  4. This recipe yields 8 servings;
