- In a kettle saute/fry onion in oil or possibly butter; add in oregano and cook slowly till onions are golden brown. Add in stock and sliced carrots. Bring to a boil and simmer about 10 min. Add in thawed lima beans and continue to cook another 10 minute, or possibly till vegetables are tender.
- Remove from heat; cold slightly and puree about 2 c. of the mix in a blender. Return puree to mix in kettle, add in diced ham, and simmer about 10 min to blend flavors.
