I've been keeping things dead simple with the cooking this week as life has gotten busy.
Those of you at college or university are also probably in the same boat with final exams and term papers staring you in the face this time of year.
Busy times call for fast meals and this "quickie" (that you can make for breakfast, lunch or even dinner) includes an absolute favorite cheese of mine...Jalapeño Havarti. It's melted on top of scrambled eggs and fried ham and served on a toasted bagel. So good!
The thought did cross my mind to sauce this sandwich up but I couldn't decide where to go with that. No matter, it still scored high on the flavor scale even though I still have visions of sauce on this sandwich.

Ham, Egg and Jalapeño Havarti Breakfast Bagel
Time it takes: 10 minutes
Makes: 1 sandwich
- 2 slices black forest ham, thinly sliced
- 2 eggs
- 2 tbsp milk
- Pinch each salt and pepper
- Sliced Jalapeño Havarti Cheese
- 1 Bagel (toasted)
In a non-stick skillet, fry ham slices over medium high heat, about 2 minutes per side. Remove ham and set aside.
In a small bowl whisk together, eggs, milk, salt and pepper. Add to same skillet used to cook ham. Cook and stir over medium-low heat until eggs come together and are cooked.
Place cooked ham on bottom bagel slice. Spoon on cooked eggs (while they are still hot). Top with cheese and bagel top.
