  • 450 gm puff pastry
  • 225 gm onion finely minced
  • 175 gm eating apple grated
  • 75 gm ham chopped coarsely
  • 50 gm butter
  • 1 x bay leaf
  • 50 gm frzn minced spinach
  • 25 gm flour
  • 300 ml lowfat milk
  • 175 gm gruyere cheese grated
  • 1 x grating of nutmeg pepper beaten egg for glazing

  1. Roll out half the pastry to an oblong about 280 x 125mm.
  2. Place on a baking sheet and prick it all over with a fork.
  3. Bake in the roasting oven on the second set of runners from the top for 15 to 20 min till risen and golden.
  4. Prepare a sauce with half the butter melted in a saucepan.
  5. Stir in the flour and spinach.
  6. Cook for 1 to 2 min then stir in the lowfat milk nutmeg and pepper.
  7. Boil till thickened and stir in half the grated cheese.
  8. Set aside to cold.
  9. Heat the remaining butter in a saucepan and sauce the onion.
  10. When softening add in the grated apple and bay leaf cover and cook gently in the simmering oven for 15 min.
  11. To assemble spoon the onion mix over the pastry base.
  12. Top with the ham followed by the spinach sauce.
  13. Sprinkle over the remaining cheese.
  14. Roll the remaining pastry to an oblong slightly larger than the base.
  15. Carefully lay this on top of the filling and tuck under any raw pastry edges to make a secure parcel.
  16. Brush the pastry well with the egg glaze mark a lattice pattern over the pastry. Sprinkle with coarse sea salt.
  17. Bake with the shelf on the bottom set of runners of the roasting oven.
  18. Slide in the baking tray and bake for 30 to 40 min till pastry is puffed and golden.
  19. Serve hot.
  20. Any leftover ham or possibly turkey can be used for this recipe.
  21. The chopped ham can be replaced with the same quantity of other cool cooked chopped meat.
  22. Serves 6
