This is a fruit cake made from leftover or stale bread and cold tea it's my nanny Palmers recipe and is shared all over the world from magnetic island to Toronto in Canada Nanny Palmers Gur Cake

  • For the Pastry
  • 500g plain flour
  • 250g margarine
  • Cold water
  • Mix flour and margarine until you have fine bread crumb mix add the water until you have a nice pastry consistency. Split in two roll one half for the bottom of the tray and the second for the top.

  2. 300g stale bread (about 8 slices of sliced pan)
  3. 350ml fresh, strongly brewed tea
  4. 150g mixed dried fruit (sultanas, raisins or whatever else takes your fancy)
  5. 150g dark brown sugar
  6. 2tsp mixed spice
  7. 1 egg
  8. Remove any very thick, hard crusts from the bread.
  9. Place the bread in a medium-sized bowl and pour the tea over it. Allow the tea to soak in and soften for a minute or two, then mash well with a fork or your hand. You need just enough liquid to wet all of the bread – the mashed bread mixture should be stiff rather than overly liquidy if so just pour any excess liquid off.
  10. Stir in the fruit sugar and spice and egg .Mix well and leave to plump up for an hour or two.
  11. When you’re ready to bake, preheat the oven to 200C gas mark 6
  12. Put filling on top of first layer of pastry then top with second layer. Prick pastry with a fork and brush with a little milk or an egg wash. Bake for about 30-35 mins until golden brown. Then enjoy with a big mug of tea.
