- 1/2 cup potato starch
- 1 1/4 tsp xanthan gum
- 1/2 tsp salt
- 4 Tbsp cold vegetable shortening
- 1 egg
- 2 Tbsp water
- Gluten Free Pesto and Zucchini Tart
- 1 recipe Gluten Free Pastry
- 1/2 cup homemade or jarred pesto (I made mine out of brazil nuts, basil, olive oil, spinach, salt and pepper)
- 1 zucchini, sliced thin on a mandoline
- 1/4 cup parmesan (we used Vegan Veggie Shreds)
- 1/2 cup mozzarella (we used Vegan Veggie Shreds)
- 1/2 tsp cinnamon
- 1/2 tsp tapioca starch
