- 2 x Garlic cloves, chopped
- 1 x Chile, habanero, seeded, stemmed, chopped
- 1 lrg Avocado, peeled, pitted
- 2 c. Tomotoes, peeled, minced
- 1 c. Oil, olive
- 1/4 c. Vinegar, wine, red
- 1 tsp Mustard, prepared
- 2 Tbsp. Parsley, italian, chopped Salt, to taste

- With a mortar and pestle, mash the onion, garlic, chile, avocado, and tomatoes into a paste. This may need to be done in batches. Add in remaining ingredients and blend well with a fork.
- This suace contains fresh avocado and therefore must be used immediately and can't be stored. Use to marinate and/or possibly baste grilled or possibly barbecued shrimp, beef or possibly chicken.
