.%20Their%20beef%20is%20widely%20considered%20among%20the%20very%20best%20and%20is%20a%20beef%20of%20choice%20for%20many%20of%20the%20finest%20upscale%20restaurants%20including%20French%20Laundry,%20Per%20Se,%20CUT,%20Craft%20Steak%20and%20Wolfgang%20Puck.%20I%20won%E2%80%99t%20sugar-coat%20the%20fact%20that%20their%20beef%20isn%E2%80%99t%20cheap.%20But%20their%20price%20tag%20reflects%20the%20quality.%3C/p%3E%3Cp%3EWe%20experienced%20Snake%20River%20Farms%E2%80%99%20beef%20for%20the%20first%20time%20when%20we%20dined%20at%20John%20Howie%20Steak%20in%20Bellevue,%20WA.%20I%20mentioned%20in%20my%20restaurant%20review%20that%20when%20you%20walk%20into%20the%20restaurant%20the%20case%20below%20is%20one%20of%20the%20first%20things%20you%20see.%20It%20showcases%20the%20world%E2%80%99s%20finest%20beef,%20including%20beef%20from%20Snake%20River%20Farms.%20Our%20steaks%20were%20incredible%20and%20I%20never%20thought%20I%E2%80%99d%20be%20able%20to%20replicate%20anything%20quite%20like%20them%20at%20home.%3C/p%3E%3Cp%3EWell,%20earlier%20this%20week%20a%20package%20arrived%20from%20Snake%20River%20Farms%20and%20Double%20R%20Ranch.%3C/p%3E%3Cp%3EWe%20received%20the%20%E2%80%9CDad%E2%80%99s%20Perfect%20Gift%20Package%E2%80%9D%20which%20contains%202%20bacon-wrapped%20filet%20mignons,%202%20american%20kobe%20ribeye%20filets,%201%20massive%20bone-in%20ribeye%20(Cowboy%20Chop),%202%20top-sirloin%20filets%20and%201%20jar%20of%20espresso%20brava%20sea%20salt.%20It%20arrived%20frozen%20in%20solid%20packaging%20with%20dry%20ice.%3C/p%3E%3Cp%3EI%20couldn%E2%80%99t%20wait%20to%20sample%20this%20beef%20and%20I%20selected%20one%20of%20each%20of%20the%20steaks,%20except%20for%20the%20large%20cowboy%20chop,%20to%20prepare%20yesterday.%3C/p%3E%3Cp%3EI%E2%80%99m%20saving%20the%20massive%20cowboy%20chop%20for%20Father%E2%80%99s%20Day,%20but%20I%20actually%20happen%20to%20have%20a%20picture%20of%20it%20prepared%20at%20John%20Howie%20Steak.%20I%20snapped%20this%20picture%20on%20the%20cart%20just%20before%20the%20waiter%20moved%20it%20to%20the%20table%20next%20to%20us.%20I%20heard%20more%20gasps%20than%20ours%20as%20people%20gawked%20at%20this%20Hercules%20of%20a%20steak.%20Seriously%20the%20size%20of%20a%20football%20%E2%80%93%20just%20the%20way%20my%20dad%20and%20husband%20would%20like%20it.%3C/p%3E%3Cp%3ESnake%20River%20Farms%20and%20Double%20R%20Ranch%20steaks%20are%20aged%2028%20days%20for%20improved%20flavor%20and%20texture,%20hand%20cut%20by%20a%20master%20butcher%20and%20individually%20wrapped.%20The%20weight%20of%20the%20steaks%20are%20hand-written%20on%20the%20packages.%20The%20personal%20attention%20to%20the%20beef%20really%20impresses%20me.%3C/p%3E%3Cp%3EWhen%20the%20meat%20was%20thawed%20and%20I%20picked%20it%20up,%20what%20immediately%20stood%20out%20to%20me%20was%20its%20texture.%20It%20was%20the%20softest,%20most%20tender%20beef%20I%20have%20ever%20handled.%20It%20was%20so%20tender%20it%20almost%20felt%20like%20it%20would%20melt%20in%20my%20hand.%3C/p%3E%3Cp%3EI%20didn%E2%80%99t%20want%20to%20do%20anything%20to%20adulterate%20the%20flavor.%20I%20wanted%20to%20experience%20the%20richness%20of%20the%20beef%20itself%20and%20so%20the%20only%20preparation%20involved%20was%20some%20kosher%20salt%20and%20freshly%20ground%20black%20pepper.%20It%20was%20ready%20for%20the%20grill.%3C/p%3E%3Cp%3EI%20cranked%20up%20my%20Weber%20grill%20until%20scorching%20hot%20and%20laid%20the%20steaks%20on%20the%20grates%20over%20direct%20heat%20to%20give%20them%20a%20good%20sear.%3C/p%3E%3Cp%3EDepending%20on%20the%20thickness,%20sear%20the%20steaks%20for%201-2%20minutes.%20Then%20use%20a%20wide%20spatula%20to%20lift%20the%20steak%20and%20give%20it%20a%20quarter%20turn%20(90%20degrees)%20and%20sear%20it%20for%20another%201-2%20minutes.%20This%20will%20create%20those%20nice%20criss-cross%20grill%20marks.%20Then%20flip%20the%20steaks%20over%20and%20repeat.%3C/p%3E%3Cp%3EThere%E2%80%99s%20no%20need%20to%20cut%20into%20the%20steak%20or%20use%20a%20meat%20thermometer%20to%20check%20for%20doneness.%20You%20can%20tell%20when%20a%20steak%20is%20done%20by%20the%20color%20of%20the%20juices%20that%20rise%20to%20the%20top.%20Depending%20on%20how%20done%20you%20like%20your%20steak,%20the%20juices%20will%20either%20be%20red,%20pink%20or%20clear.%3C/p%3E%3Cp%3EWe%20sat%20down%20to%20enjoy%20our%20steaks%20and%20our%203%20and%205%20year%20old%20kids%20savored%20them%20right%20along%20with%20us.%3C/p%3E%3Cp%3EThese%20steaks%20were%20as%20good%20as%20the%20very%20best%20steaks%20we%E2%80%99ve%20had%20at%20the%20finest%20restaurants.%20We%20cannot%20recommend%20it%20highly%20enough,%20whether%20it%E2%80%99s%20for%20a%20special%20occasion%20like%20Father%E2%80%99s%20Day,%20a%20romantic%20couple%E2%80%99s%20dinner%20at%20home,%20or%20just%20enjoying%20it%20solo.%3C/p%3E%3Cp%3ESnake%20River%20Farms%20and%20Double%20R%20Ranch%20are%20offering%20a%20selection%20of%20packages%20for%20Fathers%20Day.%20If%20you%E2%80%99re%20interested%20in%20making%20a%20special%20meal%20to%20c
