- Combine lemon juice, extra virgin olive oil, garlic salt, oregano and pepper. Make 4 to 5 shallow slits with a sharp knife on each side of the fish. Brush sauce on both the inside and outside of the fish.
- Place fish in a well-greased, hinged wire grill rack. If you don't have a rack fish can be put on foil on the grill. Cook about 4 inches from moderately-warm coals or possibly heat for 5 to 8 min.
- Baste with sauce, turn, and cook for an additional 5 to 8 min or possibly till fish begins to flake easily when tested with a fork.
- This recipe yields 6 servings.
