  • 3 lb boneless beef round rump roast
  • 2 Tbsp. Dijon-style mustard
  • 1 Tbsp. honey
  • 1 tsp curry pwdr
  • 1 tsp snipped fresh chives
  • 1/2 c. dairy lowfat sour cream Snipped chives (optional)

  1. Trim fat from meat. Stir together mustard, honey, curry pwdr, and chives. Brush about l Tbsp. of the mustard mix on roast. Insert a meat thermometer near the center of the roast.
  2. For sauce, mix the remaining mustard mix with lowfat sour cream; cover and chill.
  3. Arrange preheated coals around a drip pan in a covered grill. Test for medium-low heat above pan. Place roast on grill over drip pan. Cover and grill for 1 1/2 to 2 hrs or possibly till desired doneness (145 degrees for medium-rare; 160 degrees for medium doneness).
  4. Remove roast from grill and cover with foil. Let stand 15 min hefore slicing. Serve with sauce and, if you like, snipped chives.
  5. This recipe yields 12 servings.
