%20and%20full%20of%20vitamins%20A%20and%20C!%3C/p%3E%3Cp%3EWhich%20is%20why%20I%20concocted%20this%20delicious%20summer%20salad,%20full%20of%20some%20of%20my%20favorite%20ingredients%20for%20their%20taste%20and%20nutrients.%3C/p%3E%3Cp%3EMint%20Pistachio%20Pesto,%20may%20sound%20intimidating,%20but%20I%20promise%20it%20won%E2%80%99t%20disappoint!%3C/p%3E%3Cp%3EIt%E2%80%99s%20so%20tasty%20that%20I%20literally%20add%20it%20to%20every%20dish%20I%20make!%20I%E2%80%99ve%20gotten%20to%20the%20point%20of%20consuming%20about%201%20batch%20a%20week%20%E2%80%93%20yikes!%3C/p%3E%3Cp%3EGood%20news%20however,%20pistachios%20are%20so%20rich%20in%20flavor%20that%20there%E2%80%99s%20no%20need%20to%20add%20a%20ton%20of%20olive%20oil,%20making%20this%20a%20light%20substitute%20for%20traditional%20pestos.%3C/p%3E%3Cp%3EChickpeas%20are%20my%20favorite%20legume.%20If%20you%E2%80%99re%20a%20fan%20as%20well%20and%20think%20they%20taste%20good%20raw,%20try%20them%20roasted!%20This%20brings%20the%20fat%20and%20flavors%20to%20the%20surface.%3C/p%3E%3Cp%3EThey%20taste%20great%20spiced%20just%20about%20anyway%20%E2%80%93%20Indian%20spices,%20Italian%20herbs,%20making%20them%20a%20must-have%20in%20my%20kitchen!%3C/p%3E%3Cp%3EWhen%20you%20roast%20the%20chickpeas%20it%20adds%20a%20little%20extra%20crunch,%20making%20them%20taste%20similar%20to%20a%20nut.%20They%E2%80%99re%20full%20of%20protein%20and%20an%20awesome%20salad%20topper!%20I%20snack%20on%20these%20when%20I%E2%80%99m%20in%20a%20crunch.%3C/p%3E%3Cp%3EWho%20doesn%E2%80%99t%20love%20pomegranate%20seeds%E2%80%A6%20I%20think%20they%E2%80%99re%20great%20in%20salads.%20They%20help%20me%20to%20feel%20more%20satisfied%20and%20not%20crave%20dessert%20(as%20much)%20because%20of%20their%20sweetness%20and%20added%20texture.%3C/p%3E%3Cp%3EIf%20you%E2%80%99re%20not%20a%20huge%20kale%20fan,%20feel%20free%20to%20substitute%20it%20for%20your%20favorite%20leafy%20green,%20or%20even%20quinoa/rice!%3C/p%3E%3Cp%3EI%20personally%20love%20kale,%20it%E2%80%99s%20considered%20a%20%E2%80%9Cpowerhouse%E2%80%9D%20vegetable%20by%20the%20CDC%20because%201%20serving%20gives%20you%20over%20100%25%20of%20the%20RDA%20(recommended%20dietary%20allowance)%20for%20vitamins%20A,%20K%20and%20C!%3C/p%3E%3Cp%3EIf%20you%20are%20new%20to%20eating%20kale,%20stick%20with%20baby%20kale.%20It%20has%20a%20much%20milder%20taste%20in%20salads!%3C/p%3E%3Cp%3EGrilled%20Peach%20and%20Minto%20Pistachio%20Pesto%20Summer%20Salad%3C/p%3E%3Cp%3EBy%20%20Kathleen%20July%2030,%202015%3C/p%3E%3Cp%3EPrep%20Time%20:10%20minutes%3C/p%3E%3Cp%3ECook%20Time%20:20%20minutes%3C/p%3E%3Cp%3EYield%20:%202%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EFor%20the%20Mint%20Pistachio%20Pesto:%3C/p%3E%3Cp%3EPlace%20all%20of%20you%20ingredients%20into%20a%20food%20processor.%20I%20use%20a%20stick%20blender%20for%20this%20and%20a%20large%20bowl%20which%20works%20perfectly.%3C/p%3E%3Cp%3EBlend%20until%20all%20the%20ingredients%20are%20incorporated%20and%20the%20mint%20leaves%20have%20been%20broken%20down%20into%20very%20small%20pieces%20(think%20store%20bought%20pesto%20size)%3C/p%3E%3Cp%3ESet%20this%20aside%20while%20we%20prep%20everything%20else!%3C/p%3E%3Cp%3EFor%20the%20Salad:%3C/p%3E%3Cp%3EOpen%20the%20can%20of%20garbanzo%20beans%20and%20rinse%20thoroughly%20in%20a%20strainer.%3C/p%3E%3Cp%3EIn%20a%20medium%20sized%20sauce%20pan,%20heat%201%20Tablespoon%20of%20olive%20oil,%20and%20pour%20the%20rinsed%20garbanzo%20beans%20in.%3C/p%3E%3Cp%3EKeep%20these%20on%20low-medium%20heat,%20we%20are%20trying%20to%20crips%20these%20but%20they'll%20taste%20better%20if%20we%20slowly%20do%20so.%20The%20beans%20will%20pop%20once%20they've%20been%20heated%20to%20a%20certain%20level.%20Stir%20these%20and%20keep%20a%20close%20eye%20on%20them,%20pull%20them%20off%20the%20heat%20once%20they're%20starting%20to%20get%20darker%20in%20color.%3C/p%3E%3Cp%3EIn%20another%20medium%20sized%20sauce%20pan,%20add%20the%20chopped%20kale%20and%201%20Tablespoon%20of%20olive%20oil.%20Toss%20this%20around%20until%20the%20leaves%20begin%20to%20soften,%20salt/pepper%20to%20taste%20and%20set%20aside.%3C/p%3E%3Cp%3EBrush%20(or%20spray)%20with%20olive%20oil%20your%20sliced%20peaches.%3C/p%3E%3Cp%3EHeat%20up%20the%20BBQ,%20and%20place%20these%20directly%20on%20the%20grill%20-%20keep%20a%20close%20eye%20as%20these%20don't%20take%20long%20to%20soften,%20usually%20about%203%20minutes%20each%20side.%3C/p%3E%3Cp%3EAssemble%20the%20salad%20-%20Place%20the%20kale%20on%20the%20bottom,%20then%20garbanzo%20beans%20and%20peaches.%20Cover%20the%20salad%20with%20the%20rinsed%20blueberries,%20pomegranate%20seeds%20pistachios%20and%20goat%20cheese%20crumbles.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3EDo%20you%20love%20peaches%20as%20much%20as%20we%20do%20and%20want%20to%20find%20some%20more%20ways%20to%20use%20them%20before%20the%20seasons%20up?!%3C/p%3E%3Cp%3EHere%20are%20some%20of%20our%20favorites%E2%80%A6%3C/p%3E%3Cp%3EI%20top%20my%20pancakes%20with%20saut%C3%A9ed%20peaches%20(get%20the%20recipe%20here!)%3C/p%3E%3Cp%3EKath
