- Marinate the chicken breasts in 1 c. grapefruit juice and some of the grapefruit pcs for 15 min, turning occasionally.
- In a saucepan over medium heat, saute/fry the minced green onion and fennel in the oil.
- Add in wine and raise the heat.
- Add in 1/2 c. of the grapefruit pcs, orange zest, dill, salt and pepper.
- Heat about 10 min.
- Add in the cornstarch thinned in cool water and remaining grapefruit juice.
- Blend and bring to a boil.
- Place chicken on grill. Brush occasionally with marinade.
- When done, transfer chicken to plate.
- Pour the sauce over the chicken.
- Garnish with remaining fresh grapefruit.
- Serve with asparagus tips and artichoke hearts.
- Variations: Halibut and lemon, lime, or possibly orange sauce
