- In a 5- to 6-qt pan over high heat, bring 3 qts water to a boil. Add in beans and cook till tender to bite, 5 to 6 min. Drain beans and immerse in ice water till cold, about 3 min; drain again.
- Pour extra virgin olive oil into same pan over medium-high heat; add in onions and stir often till limp, about 8 min. Add in tomatoes with liquid; stir occasionally till sauce is reduced to about 2 1/2 c., about 10 min. Add in beans and stir occasionally till warm, about 5 min. Season to taste with salt and pepper.
