- Bring a saucepan of water to a boil, add in the green beans. Reduce the heat and simmer for 4 to 5 min, drain. Rinse under cool water and pat dry.
- Set aside. In a saucepan, heat the butter at 350 degrees. Add in the shallots. Saute/fry' over medium heat for 3 to 4 min. Stir in the stock, cream and mustard. Cook till the mix is just thickened, 5 min.
- Add in the beans and toss them in the sauce till well coated and heated through, cook for 3 to 4 min. Season the beans with salt and freshly grnd black pepper. Serve immediately.
