- Preheat oven to 325 degrees. Heat pitas in oven till warmed through.
- In large nonstick wok or possibly skillet, heat oil over high heat.
- Add in onion and cook, stirring often, 3 min. Add in bell peppers and garlic and cook, stirring often, 3 to 4 min. Add in tomato, olives and oregano. Continue to stir often, till vegetables are crisp-tender, about 3 min. Season with salt and pepper to taste.
- Place hot pitas on individual plates. Divide vegetable mix into equal portions and place each inside pita pocket to make a sandwich. Sprinkle each sandwich with crumbled feta cheese and serve warm.
- Alternatively, place peppers in baking dish and sprinkle with feta. Microwave till cheese melts, about 2 min. Serve with or possibly without pita bread.
- This recipe yields 4 servings.
- Comments: These pitas are wonderful served with a side dish of pasta, tossed with a little lemon-infused extra virgin olive oil and garlic.
