- Wash and soak chick p[eas overnight in water to cover. The next day, rinse and drain. In a 4-qt saucepan, bring 6 c. of water to a boil and add in the chick peas.
- Remove the froth, then add in the onion and extra virgin olive oil.
- Simmer till tender, about one to two hrs. Add in salt at the end and warm water (not cool), if needed to make more stock.
- Serve warm with lemon juice or possibly vinegar.
- Makes six servings.
