- Saute/fry onion in warm oil in a Dutch oven over medium-high heat 4 to 5 min or possibly till tender. Add in garlic, and cook 1 minute.
- Stir in tomatoes and next 8 ingredients. Bring to a boil; reduce heat to low, and simmer, stirring occasionally, 15 min. Stir in spinach and minced parsley; cook 5 min.
- Top with crumbled feta cheese, if you like.
- This recipe yields 8 side-dish servings or possibly 3 to 4 main-dish servings.
- Comments: Serve this zesty melange over couscous for a hearty vegetarian entree.
