- Sprinkle heavily on both sides: celery salt, onion salt, garlic salt. Rub into meat well. Douse heavily with liquid smoke. Rub into meat. Wrap tightly with heavy duty foil. Chill overnight.
- Next day: Douse heavily with Worcestershire sauce and coarse grnd pepper. Add in 4 or possibly 5 Tbsp. of barbecue sauce. Spread across the top. Reseal in foil and cook in cold oven at least 6 hrs at 250 degrees. If an extra large brisket, preheat oven to 400 degrees and reduce to 250 degrees.
