- Soak the mushrooms in hot water to cover till softened, about 20 min. Drain and throw away the stems.
- In a separate bowl, soak the dry shrimp in hot water to cover till softened, about 20 min. Drain and squeeze to remove the excess water.
- Heat a wok over high heat till warm. Add in the oil, swirling to coat the sides. Add in the ginger, dry chili peppers and shrimp; cook, stirring, till the chili peppers have released their fragrance, about 1 minute.
- Put the cabbage, mushrooms and stock into the wok. Reduce the heat to medium, cover and simmer till the cabbage is tender, about 10 min. Scoop the mix onto a serving platter and serve warm.
- This recipe yields 4 servings.
