  1. Make pie crust by blending together flour and shortening. Add in 1/2 c. sugar, 2 Large eggs, 1 tsp. vanilla and orange and lemon rind. Blend well and roll flat on a floured cutting board. Place in a 9 x 13 inch baking pan and set aside.
  2. FILLING: Separate egg whites till they form soft peaks.
  3. Set aside. Beat egg yolks well and add in 1 tsp. vanilla, ricotta cheese, 2 c. sugar, grain, and citron. Blend well and slowly mix in egg whites.
  4. Pour into pie crust and bake at 400 degrees for 10 min. Reduce heat to 350 degrees and bake 40 min more till light golden.
  5. Note: canbe baked in 10 inch pie crust.
