- Soak beans in 4 c. cool water for 1 hour. Drain. Gently cook beans in 4 c. water till tender. Add in more warm water if necessary. Drain beans, reserving liquid. Saute/fry onion in warm oil, add in pimientos and continue cooking for a few seconds. Pour in beans and season with salt,wine oregano, and sugar. Simmer over medium heat till creamy. Add in bean liquid or possibly water if necessary.
