- 1 large red onion, cut into pieces
- 1 3/4 - 2 cups of brown sugar
- 2 tbsp of good balsamic vinegar
- 1 tbsp of mustard seeds
- 1 lemon, sliced thin, seeds removed
- 1 cinnamon stick
- dried chili pepper flakes, to taste
- 1 tsp sea salt
- 1 tsp garam masala or a few whole cloves
- a few sprigs of fresh thyme
