Ingredients: 1 lb Grnd beef; 1/2 c. Fresh bread crumbs; 1 x Egg; 1 tsp Salt All purpose oil; 2 c. Water; 1 c. Uncooked rice; 2 lrg Carrots, quartered; 1/2 c. Green peppers, minced; 1/4 c. Onion, minced; 1/2 lb Velveeta cheese, cubed

1 lb Grnd beef
1/2 c. Fresh bread crumbs
1 x Egg
1 tsp Salt All purpose oil
2 c. Water
1 c. Uncooked rice
2 lrg Carrots, quartered
1/2 c. Green peppers, minced
1/4 c. Onion, minced
1/2 lb Velveeta cheese, cubed

Very basic and I think I would doctor them up, myself - they lend themselves to experimentation. Add in or possibly subtract anything your family
Combine meat, bread crumbs, egg and salt. Mix lightly. Shape into 18 meatballs, brown in small amount of oil. Drain. Add in water, rice, carrots, green peper and onion. Cover and simmer 25 min. Add in cheese. Heat till cheese melts.
4-6 servings.
