%20Avocado,%20Quinoa%20&%20Fava%20Bean%20Salad%20for%20my%20lunch%20a%20week%20or%20so%20ago.%20%20I%20prepped%20as%20many%20of%20the%20components%20as%20I%20could%20a%20head%20of%20time.%20%20Omitting%20the%20radishes%20because%20I%20don't%20like%20them.%20%20Swapping,%20adding,%20subtracting%20this%20and%20that%20for%20things%20I%20had%20on%20hand.%3C/p%3E%3Cp%3EI%20thought%20it%20looked%20pretty%20good.%20%20The%20first%20few%20bites%20were.%3C/p%3E%3Cp%3EThen%20it%20became%20too%20much%20of%20the%20same%20thing.%20%20Over%20and%20over.%3C/p%3E%3Cp%3EThe%20next%20day%20I%20decided%20it%20needed%20some%20texture%20to%20make%20up%20for%20the%20lack%20of%20radishes.%20%20Pine%20nuts%20tossed%20in.%20%20Tomato%20for%20color.%20%20And...why%20not...some%20goat%20cheese.%3C/p%3E%3Cp%3EUnfortunately,%20I%20was%20never%20really%20down%20with%20this%20particular%20quinoa%20dish.%20%20I%20liked%20the%20avocado%20and%20the%20dressing,%20but%20the%20quinoa%20didn't%20do%20it%20for%20me.%3C/p%3E%3Cp%3ECook%20the%20quinoa%20according%20to%20package%20directions.%20%20Toss%20in%20the%20edamame%20just%20before%20draining%20if%20using%20frozen.%20%20Drain,%20rinse,%20and%20transfer%20to%20a%20sheet%20pan%20to%20cool%20and%20dry.%3C/p%3E%3Cp%3EPeel%20the%20lemons,%20removing%20the%20white%20pith%20along%20with%20the%20peel.%20%20Segment%20the%20lemons%20into%20a%20large%20bowl.%20%20Squeeze%20the%20juice%20from%20the%20membrane%20into%20the%20bowl.%20%20Peel,%20deseed,%20and%20slice%20the%20avocado%20into%20the%20bowl%20with%20the%20lemon.%20%20Toss%20the%20avocado%20with%20the%20lemon%20segments%20and%20juice.%3C/p%3E%3Cp%3EAdd%20the%20olive%20oil,%20cumin,%20chili%20flakes,%20and%20some%20salt%20and%20pepper%20to%20the%20bowl.%20%20Gently%20mix.%20%20Add%20the%20quinoa,%20edamame,%20and%20spinach.%20%20Toss%20gently%20to%20dress.%20%20Serve%20with%20paprika%20sprinkled%20on%20top.%3C/p%3E){kind=link}
