,%20delicate,%20precious%20things%20like%20filled%20pastry%20puffs%20had%20long%20been%20far%20from%20my%20food%20thoughts.%3C/p%3E%3Cp%3EBut%20when%20I%20sourced%20a%20bakery%20for%20gluten-free%20Easy%20Eats%20magazine%E2%80%99s%20Sweet%20Surprise%20column%20in%20our%20most%20recent%20issue,%20those%20thoughts%20shifted.%20%20As%20I%20assisted%20the%20food%20stylist%20on%20the%20shoot%20I%20fell%20enamored%20of%20the%20smooth,%20thick%20dough%20that%20puffed%20into%20crackly%20rounds.%20%20I%20was%20amazed%20by%20how%20such%20seemingly%20simple%20ingredients%20and%20a%20rather%20quick%20process%20could%20make%20something%20so%20delightful.%3C/p%3E%3Cp%3ESo%20my%20proposal%20for%20FoodBuzz%E2%80%99s%2024%C3%9724%20dinner%20party%20%E2%80%93%20where%2024%20bloggers%20from%20around%20the%20world%20host%20and%20post%20on%20the%20same%20day%20%E2%80%93%20quickly%20centered%20around%20the%20thought:%20how%20much%20can%20I%20play%20with%20this%20in%20one%20meal?%20%20The%20owner%20of%20the%20bakery%20and%20creator%20of%20the%20recipe,%20Geri%20Peacock,%20had%20mentioned%20that,%20growing%20up%20as%20a%20child,%20her%20mother%20and%20grandmother%20filled%20the%20shells%20with%20things%20both%20savory%20and%20sweet.%20%20It%20was%20a%20bit%20of%20her%20heritage%20that%20she%20had%20adapted%20for%20the%20gluten-free%20community%20years%20later.%3C/p%3E%3Cp%3ESo%20I%20rounded%20up%20some%20friends,%20checked%20in%20about%20their%20dietary%20issues%20and%20cultural%20backgrounds,%20and%20set%20them%20in%20the%20living%20room%20with%20some%20cocktails%20and%20a%20really%20random%20mix%20of%20music,%20and%20got%20to%20stuffing.%3C/p%3E%3Cp%3EThe%20pastry%20recipe%20is%20below,%20with%20my%20thoughts%20about%20how%20to%20make%20each%20batch%20spot%20on.%20%20Click%20on%20the%20images%20for%20links%20to%20the%20other%20recipes.%3C/p%3E%3Cp%3EAnd%20please%20check%20out%20Easy%20Eats%20magazine%20for%20the%20original%20recipe%20and%20other%20beautiful%20gluten-free%20recipes,%20lifestyle%20tips%20and%20stunning%20photos%20%E2%80%93%20and%20my%20most%20recent%20feature%20of%20five%20gluten%20free%20pasta%20recipes!%20Oh,%20and%20coming%20out%20in%20May,%20my%20feature%20of%20six%20top-notch%20chefs%20give%20us%20their%20own%20food%20thoughts%20and%20easy-to-execute%20classic%20recipes%20made%20gluten%20free%20(two%20of%20the%20chefs%20even%20put%20gluten-free%20options%20on%20their%20menus%20after!).%3C/p%3E%3Cp%3EOh,%20and%20mucho%20thanks%20to%20my%20photographer,%20Brent%20Herrig,%20for%20plating%20and%20snapping%20away.%20%20All%20images%20are%20his.%3C/p%3E%3Cp%3EBrent%20Herrig%20%C2%A9%202012%3C/p%3E%3Cp%3EGluten-Free%20Pastry%20Puffs%3C/p%3E%3Cp%3EMakes%20about%2036%20puffs,%20depending%20on%20size%3C/p%3E%3Cp%3EThe%20original%20pastry%20recipe%20took%20a%20teeny%20tiny%20bit%20of%20playing%20with%20%E2%80%93%20things%20like%20the%20position%20of%20the%20oven%20rack%20and%20sheets%20used%20made%20a%20huge%20difference%20in%20how%20one%20sheet%20would%20either%20rise%20and%20become%20too%20thin%20or%20remain%20deliciously%20eggy%20but%20too%20dense.%20%20Luckily%20they%20are%20rather%20quick%20to%20whip%20up,%20and%20once%20you%20get%20the%20hang%20of%20it%20you%20can%20start%20swapping%20flours%20and%20fats%20with%20relative%20ease.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EHeat%20oven%20to%20400%C2%B0%20with%20rack%20in%20the%20center%20/%20one%20notch%20down%20from%20center.%20%20Line%203%20baking%20sheets%20with%20Silpat%20(the%20original%20recipe%20says%20ungreased%20cookie%20sheets%20but%20mine%20continually%20stuck%20that%20way%20%E2%80%93%20could%20be%20my%20ancient%20oven).%3C/p%3E%3Cp%3EIn%20a%20small%20pot%20on%20high%20heat,%20bring%20the%20water%20and%20butter%20(once%20it%E2%80%99s%20melted)%20to%20a%20full%20boil.%20%20Lower%20the%20heat,%20add%20the%20flour%20all%20at%20once,%20and%20mix%20thoroughly,%20using%20a%20combination%20of%20smearing%20together%20and%20folding%20to%20completely%20incorporate%20the%20flour%20into%20the%20liquid.%20%20Cook%20until%20a%20smooth%20ball%20forms.%20%20Immediately%20transfer%20to%20a%20standing%20mixer%20with%20the%20paddle%20attachment.%20%20Beat%20in%20eggs%20one%20at%20a%20time,%20starting%20on%20a%20low%20setting%20then%20raising%20to%20incorporate.%20%20About%20halfway%20through,%20beat%20until%20smooth,%20and%20then%20continue%20with%20the%20rest%20of%20the%20eggs.%20%20Once%20all%20are%20in,%20beat%20for%20about%20one%20minute%20on%20medium-high%20speed.%3C/p%3E%3Cp%3EDrop%20on%20sheets%20in%20smooth%20lumps,%20about%20one%20tablespoon%20for%20smaller%20puffs%20(what%20I%20used%20for%20dessert)%20and%20twice%20the%20size%20for%20larger%20ones.%20%20Bake%20one%20at%20a%20time%20for%2030%20minutes%20(I%20was%20lucky%20to%20use%20a%20neighbor%E2%80%99s%20oven%20as%20well).%20%20Once%20you%20put%20the%20puffs%20in,%20don%E2%80%99t%20open%20the%20oven%20for%20a%20good%2025%20minutes%20to%20check%20%E2%80%93%20they%20need%20the%20heat%20to%20ris
