- 3 Tbs sugar
- 1/4 tsp salt
- 7 Tbs unsalted butter chopped up
- 1 egg yolk
- 1/2 tsp vanilla extract
- 1/2 tsp fresh lemon juice
- 3 Tbs ice water
- For The Filling:
- 1 1/2 lbs cleaned trimmed and halved strawberries
- 1/3 cup sugar
- 2 cups of ricotta (16 oz) If you are using my recipe for ricotta double it to have enough for this recipe
- 1/4 cup powdered sugar
- 1 tsp fresh lemon juice
- 1/2 tsp grated fresh lemon zest
- 3/4 tsp vanilla extract
- 1 10 inch tart pan with a removable bottom,
- pie weights or dried beans or rice

.%20The%20one%20thing%20this%20frugal%20shopping%20left%20me%20with%20was%20a%20taste%20for%20sales%20of%20any%20sort.%20So%20when%20our%20local%20Whole%20Foods%20announced%20a%20sale%20of%20organic%20strawberries%202%20lbs%20for%203%20bucks,%20of%20course%20I%20was%20there.%20What%20a%20deal!%20I%20started%20thinking%20about%20things%20I%20might%20do%20with%20the%20berries.%20Should%20I%20make%20jam,%20shortcakes%20again,%20ice%20cream?%20Then%20my%20problem%20was%20solved%20for%20me%20when%20a%20close%20friend%20of%20ours%20who%20has%20a%20gluten%20allergy%20suggested%20we%20get%20together.%20%22I'll%20bring%20the%20dessert!%22%20I%20said%20and%20I%20suddenly%20knew%20just%20what%20I%20wanted%20to%20make.%3C/p%3E%3Cp%3EThis%20recipe%20for%20a%20strawberry%20ricotta%20tart%20started%20out%20as%20a%20recipe%20I%20saw%20for%20a%20regular%20strawberry%20tart%20made%20with%20mascarpone%20cheese,%20strawberries,%20and%20port%20wine.%20I%20thought%20why%20not%20make%20it%20a%20bit%20lighter%20with%20ricotta,%20and%20instead%20of%20Port%20wine,%20(which%20I%20didn't%20have).%20I'd%20use%20Strawberry%20Balsamic%20Vinegar%20from%20Sonoma%20Harvest.%20I%20used%20my%20special%20blend%20of%20gluten-free%20flour%20for%20the%20crust,%20but%20you%20can%20use%20any%20type%20of%20gluten-free%20flour,%20or%20regular%20flour%20if%20there%20are%20no%20allergies%20involved.%3C/p%3E%3Cp%3EI%20made%20the%20ricotta%20myself%20which%20is%20pretty%20dang%20easy.%20It's%20also%20easy%20to%20just%20pick%20up%20a%20carton.%20If%20you'd%20like%20to%20make%20your%20own%20%20ricotta%20my%20recipe%20is%20here.%3C/p%3E%3Cp%3EAnyway,%20whether%20you%20make%20your%20own%20or%20use%20store%20bought,%20this%20is%20a%20pretty%20quick%20recipe%20to%20make.%20So%20let's%20get%20to%20it.%3C/p%3E%3Cp%3EStrawberry%20Ricotta%20Tart%3C/p%3E%3Cp%3EHere's%20What%20You%20Need:%3C/p%3E%3Cp%3EFor%20the%20Tart:%3C/p%3E%3Cp%3EHere's%20What%20To%20Do:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20375%20degrees,%20with%20the%20rack%20in%20the%20middle.%3C/p%3E%3Cp%3EBlend%20your%20flour,%20sugar,%20butter,%20and%20salt%20in%20a%20bowl%20with%20a%20pastry%20blender,%20or%20do%20as%20I%20do%20and%20mix%20it%20together%20with%20a%20couple%20of%20pulses%20of%20a%20food%20processor.%20(much%20easier)%3C/p%3E%3Cp%3EBlend%20it%20until%20you%20have%20a%20mealy%20mix.%20Set%20it%20aside%3C/p%3E%3Cp%3EIn%20a%20small%20bowl%20mix%20together%20the%20egg%20yolk,%20vanilla,%20lemon%20juice%20and%20ice%20water.%3C/p%3E%3Cp%3EDrizzle%20this%20mixture%20over%20the%20flour%20mixture%20and%20pulse%20it%20until%20you%20have%20dough.%3C/p%3E%3Cp%3EKnead%20the%20dough%20on%20a%20lightly%20floured%20surface%20for%20about%205%20times.%3C/p%3E%3Cp%3EShape%20it%20into%20a%205%20inch%20disc%20and%20put%20it%20in%20the%20center%20of%20your%20tart%20pan.%3C/p%3E%3Cp%3ECover%20it%20with%20plastic%20wrap,%20and%20then%20using%20your%20fingers,%20push%20and%20spread%20the%20dough%20around%20the%20bottom%20and%20sides%20of%20the%20pan%20until%20they're%20covered.%3C/p%3E%3Cp%3ETake%20a%20fork%20and%20prick%20the%20dough%20all%20over%20with%20a%20fork%20%20through%20the%20plastic%20wrap,%20then%20stick%20the%20whole%20thing%20in%20the%20freezer%20to%20firm%20up%20for%2010%20minutes.%3C/p%3E%3Cp%3ETake%20the%20tart%20shell%20out,%20peel%20off%20the%20plastic%20wrap%20and%20line%20the%20tart%20shell%20with%20aluminum%20foil.%3C/p%3E%3Cp%3EFill%20it%20with%20pie%20weights%20or%20beans.%3C/p%3E%3Cp%3EBake%20the%20tart%20until%20the%20sides%20are%20set%20and%20the%20edges%20are%20pale%20golden.%20This%20takes%20about%2020%20minutes.%3C/p%3E%3Cp%3ECarefully%20take%20the%20foil%20and%20pie%20weights%20out%20of%20the%20tart%20and%20pop%20it%20back%20into%20the%20oven%20until%20it's%20a%20deep%20golden%20color,%20another%2020%20minutes%20more.%3C/p%3E%3Cp%3ECool%20the%20tart%20in%20the%20pan%20for%20about%2045%20minutes%20and%20remove%20the%20ring.%3C/p%3E%3Cp%3EStir%20the%20strawberries%20together%20in%20a%20bowl%20with%20the%20granulated%20sugar%20and%20let%20it%20sit%20for%20about%2030%20minutes,%20then%20strain%20the%20juice%20out%20of%20the%20berries.%3C/p%3E%3Cp%3EPlace%20the%20juice%20in%20a%20small%20pot%20and%20set%20it%20aside.%3C/p%3E%3Cp%3EWhisk%20the%20ricotta%20together%20with%20the%20powdered%20sugar...%3C/p%3E%3Cp%3E...lemon%20zest...%3C/p%3E%3Cp%3E...lemon%20juice...%3C/p%3E%3Cp%3E...vanilla%20and%20a%20pinch%20of%20salt.%3C/p%3E%3Cp%3EBeat%20everything%20together%20until%20it's%20nice%20and%20stiff.%3C/p%3E%3Cp%3ESpread%20the%20ricotta%20mixture%20into%20the%20tart%20shell...%3C/p%3E%3Cp%3E...and%20spread%20it%20around.%3C/p%3E%3Cp%3EFill%20the%20tart%20shell%20up.%3C/p%3E%3Cp%3EMeanwhile%20back%20at%20the%20strawberries....%3C/p%3E%3Cp%3EAdd%201/2%20cup%20of%20Strawberry%20balsamic%20vinegar%20to%20the%20juice%20fro%20the%20macerated%20berries.%3C/p%3E%3Cp%3EPour%20it%20in%20and%20stir%20it%20around.%3C/p%3E%3Cp%3EBring%20this%20mixture%20to%20a%20boil%20then%20turn%20it%20down%20to%20a%20simmer%20and%20simmer%20away%20until%20it's%20reduced.%20This%20takes%20about%2015%20minutes%20or%20so.%3C/p%3E%3Cp%3EStir%20this%20every%20now%20and%20then%20so%20nothing%20burns.%20The%20syrup%20is%20done%20when%20it's%20thickened.%3C/p%3E%3Cp%3EArrange%20the%20sliced%20berries%20on%20top%20of%20the%20ricotta%20cheese.%3C/p%3E%3Cp%3EYou%20want%20a%20nice%20pile%20in%20the%20center.%3C/p%3E%3Cp%3EWhen%20you've%20got%20them%20where%20you%20want%20them,%20drizzle%20the%20thickened%20balsamic%20glaze%20over%20the%20berries.%3C/p%3E%3Cp%3EAnd%20serve%20it%20up!%3C/p%3E%3Cp%3ENote:%3C/p%3E%3Cp%3Ethe%20berries%20and%20the%20glaze%20should%20be%20put%20on%20the%20tart%20right%20before%20serving%20to%20avoid%20bleeding%20of%20juice%20into%20the%20ricotta%20base.%20Not%20that%20there's%20anything%20wrong%20with%20that,%20it%20just%20looks%20prettier.%3C/p%3E%3Cp%3EThis%20is%20a%20great%20dessert%20for%20the%20gluten-free%20crowd,%20and%20it%20works%20just%20as%20well%20using%20regular%20flour.%20You%20can%20also%20try%20a%20variety%20of%20berries%20on%20this%20dessert.%20Just%20use%20what%20ever's%20freshest.%20Coming%20up%20next,%20chaat%20for%20a%20crowd%20and%20a%20great%20way%20to%20serve%20it,%20thanks%20to%20Restaurantware!%20Follow%20along%20on%20Twitter%20@kathygori%3C/p%3E){kind=link}
