- 1 tsp Vanilla
- 1/4 c. Vegetable oil
- 1 Tbsp. Lemon peel
- 2 Tbsp. Lemon juice
- 1/2 c. Rice flour
- 1/4 c. Potato starch

- Beat Large eggs and sugar together. Add in vanilla, oil, lemon peel, lemon juice, and flours. Beat till smooth. Pour into greased 9"x9" baking pan. Bake in preheated 350 degree oven for 30 min. May frost or possibly serve with warm lemon sauce.
