Ингредиенты

  • 1 tbsp Olive oil
  • 1/2 Cup Quinoa- uncooked
  • 3/4 cup water or chicken broth
  • 1 onion-small dice
  • 1/2 cup mushrooms-sliced
  • 2 cloves garlic-minced
  • dash of pepper
  • 1 tbsp Cayenne or cajun
  • 1 tsp oregano
  • small shot of lime juice
  • 1/4 cup fresh cilantro
  • 1 Can italian diced tomatoes
  • 1 can Black beans- well rinsed and Drained

  1. In a pot, Sautee the onion, garlic and mushrooms til the onion is tender(5-7 minutes) Add the canned tomato, water or chicken broth, the spices and the quinoa. Simmer til the quinoa is cooked( 15-20 minutes)
  2. Add the black beans and cilantro, let heat through(5 minutes)
