- Mash together ginger root, shallots, garlic, jalapeno pepper with salt till it forms a coarse paste. In heavy skillet, heat oil - warm but not smoking. Cook paste 1 minute. Lower heat and add in curry and turmeric, stirring. Cook 2 min. Add in coconut lowfat milk and water. Cook 4 to 6 min or possibly till liquid is reduced to 1/2 c.. Add in shrimp in single layer. Turn once. Cook 3 or possibly 4 min. Serve shrimp with scallion rice.
