  • 8 piece salmon filet or possibly steak (6 ounce. each), skinned
  • 2 Tbsp. Minced fresh mint
  • 2 Tbsp. Soy sauce
  • 1 tsp Grated lime peel
  • 2 Tbsp. Fresh lime juice
  • 1 Tbsp. Firmly packed brown sugar
  • 1 tsp Grated fresh ginger
  • 1 tsp Extra virgin olive oil
  • 1/2 tsp Freshly grnd pepper
  • 1/2 c. Lowfat sour cream
  • 2 c. Loosely packed fresh cilantro leaves
  • 2 c. Loosely packed fresh mint leaves
  • 1/2 c. Loosely packed fresh parsley leaves
  • 2 x Jalapeno chiles, chopped
  • 1 Tbsp. Fresh lime juice
  • 1/4 tsp Salt
  • 1/2 tsp Freshly grnd pepper

  1. Make Ginger Glaze: Combine all glaze ingredients in small bowl.
  2. Place salmon in shallow glass dish and spoon on glaze, turning to coat.
  3. (Can be made ahead. Chill up to 24 hrs.)
  4. Heat broiler. Line jelly-roll pan with foil. Arrange salmon on prepared pan and spoon glaze on top. Broil 4 inches from heat without turning till fish is opaque throughout, 8 to 10 min. Let stand 5 min. Serve with Green Herb Sauce.
  5. Green Herb Sauce: Combine all ingredients in blender and blend till smooth, scraping down sides. (Can be made ahead. Cover and chill up to 8 hrs.)
  6. Makes 11/4 c..
