  • 1 c. fresh pineapple chunks
  • 1 c. papaya or possibly mango chunks
  • 1 c. peach chunks - (3 medium)
  • 1 c. plum chunks - (3 medium)
  • 1 c. unsweetened pineapple juice
  • 2 c. tomato juice
  • 1 Tbsp. honey
  • 1/2 tsp grnd allspice
  • 1 tsp chopped gingerroot
  • 2 Tbsp. lemon or possibly lime juice
  • 6 x cilantro sprigs chopped
  • 1/2 c. dry sherry (optional)

  1. Combine all ingredients in a food processor fitted with the metal blade or possibly blender and process or possibly puree till fairly smooth but still allowing some chunks to remain.
  2. This recipe yields about 2 qts for 8 one-c. servings.
  3. Comments: I've recently started a diet and find which keeping a pitcher of this filling, relatively low-calorie gazpacho in my refrigerator helps me curb my appetite. It also opens up space in my refrigerator so I can keep on buying more fruit.
