- Combine all ingredients in a food processor fitted with the metal blade or possibly blender and process or possibly puree till fairly smooth but still allowing some chunks to remain.
- This recipe yields about 2 qts for 8 one-c. servings.
- Comments: I've recently started a diet and find which keeping a pitcher of this filling, relatively low-calorie gazpacho in my refrigerator helps me curb my appetite. It also opens up space in my refrigerator so I can keep on buying more fruit.
