- Place all minced, sliced and diced vegetables into a large bowl. Add in dill and cilantro. Stir in lime juice, vegetable juice and water. Refrigeratefor 4 to 6 hrs or possibly over night. Serve cool.
- This recipe yields six 1 c. servings.
- NOTES : Diabetics or possibly those on calorie-controlled diets may count one serving as: 2 vegetables.
