- Heat extra virgin olive oil in a large saucepan over medium-high heat; cook garlic (about 30 seconds), then add in Mussels and cook (2 min); add in lemon juice, tomatoes, wine, parsley, basil and oregano and simmer till Mussels open
- (1-2 min more). Pour Mussels, with sauce, over slices of toasted Italian bread in large soup serving bowls.
