- 2 lb Lean Grnd Beef
- 1 x Lg. Onion, Minced
- 1 x Med. Green Pepper, Minced
- 2 Tbsp. Veg. oil
- 1 x Slice Whole Wheat Bread
- 1 c. Lowfat milk
- 2 x Large Large eggs
- 1 x Lg. Apple, Minced
- 1 c. Minced Dry Apricots
- 2 Tbsp. Curry Pwdr
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 x Curry Condiments

- Cook onion and green pepper in oil in large frying-pan till onion is transparent. Add in grnd beef and brown lightly. Pour off drippings. Soak bread in lowfat milk. Add in Large eggs, apple, apricots, curry pwdr, salt and pepper to beef. Add in bread and lowfat milk. Mix well. Place in 2-quart oven-proof casserole; bake in a moderate oven (350 degrees F.) for 45 min. Serve with curry condiments such as chutney, raisins, shredded coconut and sunflower seeds.
