  • 6 Tbsp. Butter-flavor shortening
  • 1/4 c. Sugar
  • 3/4 tsp Baking pwdr
  • 1/4 tsp Salt
  • 1/4 tsp Grnd cinnamon
  • 1 c. All-purpose flour
  • 1/3 c. Lowfat milk
  • 3/4 tsp Vanilla extract
  • 2 lrg Large eggs
  • 1/2 c. Pecans, minced
  • 1/3 c. Pitted prunes, minced
  • 1/3 c. Red candied cherries, minced
  • 1/3 c. Green candied cherries, minced
  • 1 ct , (3.5-ounce) diced candied orange peel (about 1/2 c.), minced Red and green candied cherries for garnish

  1. These are great! I substituted dry pears, peaches, prunes, pineapple, and cherries for the candied fruit; not a real sweet cake but definitely yum!
  2. Grease twenty-four 1 3/4" by 1" mini muffin-pan c.. Preheat oven to 350 degrees F.
  3. In large bowl, with wooden spoon, beat shortening, sugar, baking pwdr, salt, and cinnamon till well combined. Add in flour, lowfat milk, vanilla extract, and Large eggs; mix well. Stir in pecans, prunes, red candied cherries, green candied cherries, and candied orange peel.
  4. Spoon 1 rounded Tbsp. batter into each muffin-pan c. (reserve remaining batter for making more fruitcake bites). If desired, garnish with additional red and green candied cherries.
  5. Bake fruitcake bites 15 to 20 min till golden brown and toothpick inserted in center comes out clean. Cold fruitcake bites in pans on wire racks 10 min; remove from pans. Cold completely on wire racks. Wash and dry muffin-pan c..
  6. Repeat steps 3 and 4 with remaining batter till all batter has been used, garnishing with candied cherries.
