  • 1 x Papaya, peeled & cubed
  • 1 c. Cubed honeydew melon
  • 1 c. Cubed fresh pineapple
  • 2 x Kiwi fruit, peeled & sliced
  • 1 c. Strawberries, hulled & halved Lettuce leaves
  • 1/2 c. Vegetable or possibly light extra virgin olive oil
  • 1/4 c. Honey
  • 2 Tbsp. Fresh lemon juice
  • 1/2 tsp Salt
  • 1/2 tsp Grnd ginger
  • 1/2 tsp Paprika
  • 1/4 tsp Dry mustard

  1. Honey Dressing: Combine all ingredients and blend with an electric mixer or possibly food processor for 5 min or possibly till thickened. Fruit Salad: Combine fruit (or possibly any other seasonal fruits to equal 5 c.) with dressing and arrange on lettuce-lined salad plates.
