- 100g Butter, soften at room temperature
- 200g Caster sugar (I cut down to 150g)
- 50g Sour cream (2 tbsp)
- 3 Eggs, lightly beaten
- 1 tsp Vanilla extract
- 1 tsp Lemon or orange zest
- 210g Plain flour - sifted
- 1 tsp Baking powder
- 500g Fruits tossed with 2 tbsp sugar
- (You can use strawberries, blueberries, peaches, bananas, pearls, apples, pineapple, or any other fruits that are not too juicy.)

%20baked%20this%20beautiful%20Fruit%20Pastry%20Cake.%20It%20is%20a%20simple%20cake%20base%20with%20nicely%20brown%20crust%20at%20the%20side%20and%20fruits%20piling%20on%20top.%20Like%20HHB%20said%20this%20cake%20is%20not%20greasy%20and%20it%20doesn't%20taste%20dry.%20Very%20addictive%20cake%20that%20you'll%20not%20having%20one%20slice%20but%20going%20back%20for%20more.%3C/p%3E%3Cp%3EI've%20used%20combination%20of%20fresh%20blueberries,%20canned%20Longan%20and%20Peaches.%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EWash,%20cut%20(chunks%20or%20slice%20as%20desired)%20and%20drain%20fruits,%20toss%20with%20sugar%20(if%20desired)%20and%20set%20aside.%20(if%20using%20canned%20fruits,%20wash%20the%20fruits%20to%20remove%20syrup,%20omit%20the%20sugar).%3C/p%3E%3Cp%3EI%20used%20non-stick%20spray%20but%20you%20can%20grease%20with%20butter%20and%20flour%20the%20side%20of%20a%209%22round%20pan%20or%20a%208%22square%20pan%20and%20line%20the%20base%20with%20parchment%20paper.%3C/p%3E%3Cp%3ECream%20butter,%20sugar%20and%20sour%20cream%20till%20light%20and%20fluffy.%3C/p%3E%3Cp%3EDribble%20in%20the%20eggs%20gradually%20and%20beat%20till%20incorporated%20in%20the%20batter.%20(The%20mixture%20appear%20slightly%20curdled)%3C/p%3E%3Cp%3EAdd%20vanilla%20extract%20and%20zest.%3C/p%3E%3Cp%3EDump%20in%20the%20flour%20and%20baking%20powder%20and%20use%20a%20rubber%20spatula%20to%20stir%20roughly%20and%20continue%20to%20cream%20the%20batter%20with%20mixer%20until%20smooth.%20Pour%20batter%20into%20prepared%20pan%20and%20smooth%20out%20the%20top%20with%20a%20spatula.%3C/p%3E%3Cp%3EArrange%20fruits%20on%20top,%20don't%20press%20the%20fruits%20down%20into%20batter.%20Decorate%20the%20fruits%20as%20desired.%3C/p%3E%3Cp%3EBake%20in%20preheated%20oven%20at%20180C%20for%2060-70mins%20or%20until%20skewer%20comes%20out%20clean%20when%20inserted%20into%20the%20cake.%20Cover%20the%20top%20with%20foil%20in%20the%20last%2015%20mins%20of%20baking%20to%20prevent%20the%20top%20from%20getting%20over%20browned.%3C/p%3E%3Cp%3ELeave%20the%20cake%20to%20cool%20in%20the%20pan%20for%20about%205-10%20mins.%20Unmold%20and%20transfer%20to%20wire%20rack%20to%20let%20cool%20completely.%3C/p%3E%3Cp%3EDust%20the%20cake%20with%20some%20icing%20sugar%20if%20desired.%20(I%20used%20snow%20powder%20for%20dusting)%3C/p%3E){kind=link}
