- Whisk together the sugar and Large eggs till double the size. Mix in the flour till there are no luombps and pour into a well greased 8 inch sponge tin and bake at 220 C/ Gas 7 for 8-10 min. Remove and leave to cold.
- Gently heat the black cherry jam. To a knob of butter add in the cherries and the brandy and flambe for a couple of min.
- Add in the warmed cherries to the sponge and add in any juices to the black cherry jam. Spoon the waremd jam over the cherries.
- Around the edge decorate the flan with whipped double cream and serve.
