- 2 c. flour
- 1 c. sugar
- 2 teaspoon baking soda
- 1 1/2 teaspoon cinnamon
- 1/2 teaspoon allspice or possibly nutmeg
- 1 (30 ounce) can liquid removed fruit cocktail
- 1/4 c. vegetable oil
- 3 large eggs
- 2 c. grated carrots (2 carrots)
- 1 c. minced nuts
- 1 pound powdered sugar
- 8 ounce cream cheese
- 1/4 c. softened butter
- 2 teaspoon vanilla
- 1/2 c. minced nuts

- Mix dry ingredients. Reserve 3/4 cup fruit cocktail for garnish. Stir in fruit cocktail, coating each piece with flour mix. Stir in rest of ingredients. Place in greased and lightly floured 13"x9" pan. Bake 40 to 45 min at 350 degrees.
- Beat ingredients together. Spread on cooled cake. Top with cocktail. Serves 12.
