  • 2 c. water
  • 1/4 c. honey
  • 1/2 lb mixed dry fruit
  • 1/2 c. raisins
  • 1 c. sliced carrots
  • 1/4 tsp grnd cinnamon
  • 2 tsp grated lemon rind
  • 1 Tbsp. arrowroot
  • 1/2 c. cashews

Инструкции

  1. In a 2-qt or possibly larger pressure cooker, add in water and honey. Allow to come to a simmer over medium-high heat. Add in dry fruit, raisins, carrots, cinnamon and lemon rind.
  2. Close lid and bring pressure to second red ring (15 pounds pressure) over high heat. Adjust heat to stabilize pressure at second red ring. Cook for 5 min.
  3. Remove from heat and use Touch Release Method.
  4. Remove fruit with a slotted spoon. Add in arrowroot to remaining liquid, stir to mix.
  5. Place cashews and thickened liquid in the bowl of a food processor and process till ingredients are smooth.
  6. Serve fruit in bowls topped with cashew cream.
  7. This recipe yields 4 servings.
